Chilli Con Carne

The whole family loves this recipe, no one complains when it goes on the table. It is fool proof and requires very little attention once you've got it going, it freezes well which is an added bonus for me. You can reduce the amount of chilli as it can be quite hot also the 2tbsp of balsamic can be a bit overpowering for the kids and I tend to only just use the one!

• 2 medium onions,  2 cloves of garlic,  2 medium carrots, 2 sticks of celery, 2 red peppers, olive oil, 1 heaped teaspoon chilli powder,1 heaped teaspoon ground cumin,1 heaped teaspoon ground cinnamon,  sea salt and freshly ground black pepper,1 x 400g tin of chickpeas,1 x 400g tin of red kidney beans, 2 x 400g tins of chopped tomatoes, 500g good-quality minced beef, 1 small bunch of fresh coriander, 2 tablespoons balsamic vinegar,  natural yoghurt and an avocado to serve ( cools the chilli taste should you need to).

Chop all the veg and fry in a pan with the olive oil
add the spices with some salt and pepper and cook for about seven minutes untill soft and lightly coloured
add drained chickpeas and kidney beans and tinned tomatoes
add minced beef
fill a tomato can up with water and add to the mix
bring to the boil and then allow to simmer for about 40 minutes
add chopped corriander (including stalks) just before serving

Serve with Rice or Chunky Garlic Bread and a green Salad.
